Last weekend all my husband and I did was watch football. Seriously. All day Saturday. All day Sunday. And all night Monday. [this weekend is shaping up to be much like last weekend] So after hours and hours of sitting on the couch snuggled up to my hubs, I decided I needed to do something. And so I baked. I found this delicious recipe for banana bread, and it turned out perfect! The bread is really moist and dense, and oh so tasty! So if your in need of a yummy banana bread recipe.. I got the hook-up. Feast your taste buds on this...
Here are the ingredients:
2 cups of flour
1 teaspoon of baking powder
1/4 teaspoon of salt
1/2 cup of butter
3/4 cup of brown sugar
2 eggs, beaten
3/4 cup of walnuts
2 cups of mashed OVERRIPE bananas
(I use a few sprinkles of Nutmeg and cinnamon, but it's up to you!)
Directions:
Preheat over to 350 degrees. Grease a 9x5 loaf pan.
In a large bowl, combine flour, baking soda, and salt. In a separate bowl, cream together butter and brown sugar, and then mix in the beaten eggs. Add the brown sugar mixture to the flour mixture. Using a wooden spoon, stir the mashed bananas and walnuts to the mixture. Stir just to moisten. If you stir to much, it will dry out the bread. Add nutmeg and cinnamon (optional). Pour mixture into loaf pan.
Bake for 60-65 minutes, until a toothpick inserted into the middle comes out clean. Let cool for 10 minutes and then move to a wire rack.
I am not a big coffee fan, but Ryan loved to have this for breakfast with a cup of coffee! Bon Appetite'!





Sounds yummy. I always put chocolate chip cookies in mine, but I've never tried walnuts.
