so I got this crockpot "Best Loved Slow Cooker Recipes" cookbook during a dirty santa party, and let me just tell you, this book is the gift that has kept on giving. Best dirty santa gift EVER. I've cooked so many recipes out of this book and everyone of them has been ridiculously good. This recipe, however, will change your life. I've made it several times for different groups of people and they've all raved over it. It's so yummy and SOOOO easy. You'll be amazed at the end result.
so, without further a-due, the recipe:
Chicken Tortilla Soup
(makes 4-6 servings)
4 boneless skinless chicken thighs
2 cans (15 ounces each) diced tomatoes, undrained
1 can ( 4 ounces) chopped mild green chilies, drained
1 yellow onion, diced
2 cloves of garlic, minced
1/2 to 1 cup of chicken broth ((i use 1 cup otherwise the soup is super hearty))
1 teaspoon cumin
salt and black pepper, to taste
2 tablespoons of chopped fresh cilantro
1/2 cup of shredded monterey jack cheese
1 avocado
lime wedges
1. place the raw chicken in the crock-pot slow cooker. combine tomatoes with juice, chilies, onion, garlic, 1/2 cup chicken broth and cumin in small bowl. Pour mixture over chicken. Cover; cook on high 3 hours, or until chicken is tender.
2. Remove chicken from cock-pot slow cooker. Shred with 2 forks. Return to cooking liquid. Adjust seasonings, adding more broth if necessary.
3. Serve in soup bowls, topp each serving with cheese, avocado and a squeeze of lime juice.
And there you have it folks. That's all there is to it. I promise you'll enjoy this recipe. It's warm, hearty, and so flavorful!

anything in a crockpot makes my heart smile. But that looks amazing. I am drooling.
