It's been a few weeks since I've had the opportunity to blog! I've been super busy and was gone for an entire week to Knoxville as a chaperone on a sixth grade girls trip. By the end of the week I could tell you anything you wanted to know about Justin Bieber, but that's a whole different blog post in and of itself. Let's just say I'm glad to be home.
As I looked over my last few posts, it occurred to me that my blog has become a tribute to the pioneer woman. I seriously just can't get enough of her delish recipes. Here is a yummy pico de gallo and guacamole recipe from Ree! This woman is a culinary genius, and she does it yet again with this recipe.
What you need for the pico:
5 Roma tomatoes
1/2 large onion
3 jalapeno pepers
cilantro
lime juice
salt
What you need for the guacamole:
3 avocado's
the pico you just made
lime juice
salt
And this is how you create the masterpiece that we call pico and guac:
Cut the ends off of the jalapenos and cut into a fine dice. If you want your pico de gallo to have a spicy kick, leave the seeds in the jalapenos. I left the seeds in and the pico was not unbearably hot, it was actually quite tasty!
Next, cut the tomatoes in half length wise and then slice each half into three or four slices. Then slice in the other direction to create a dice!
Add together the jalapenos, tomatoes, and onions into a bowl.
Next, cut up the cilantro and add it to the mix.
Then squeeze half (or more) of a lime into the bowl.
Stir it all together, and there you have it! Some yummy pico de gallo to feed to your husband when he gets home from work. Believe me, he will be thankful! :)
But don't stop there! Use that pico and turn it into some guacamole! You'll be so glad you did! This guac recipe serves about six people and it does not store very well in the fridge because the avocados turn brown and mushy. So be sure to eat it the same night you make it! If you're making it for just two-three people, be sure to half the recipe.
First step: Take those avocados, slice them in half, take out the pit, and spoon them out of their shells!
Next, mash the avocado's up with a fork or whatever you fancy but be certain to leave it somewhat chunky. Then add some salt and a heaping spoonful of the pico!
