Lately I've been on this cooking kick where all I want to do is try new recipes. I guess it's because it's finally summer time and school is over so I actually have time to cook a yummy meal rather than throw some Bertolli on the stove (not that anything is wrong with Bertolli. Confession: we kinda love it.) I always forget to take pictures as I'm cooking though, so i may wait to post the recipes until I cook them again and can take pictures. Because if you're like me, you like visuals. Here's the last recipe I cooked: BBQ Chicken Pizza. it was so good, it made my tummy do a little dance, and it's easy peezy to make! So here's what you need:
BBQ Chicken Recipe
1 whole pizza crust (I use boboli)
4 0r 5 boneless, skinless chicken tenders OR 2 whole boneless, skinless chicken breasts
your favorite BBQ sauce ( I used Corky's)
olive oil
16 ounces (1 bag) of Mozzarella cheese
1/2 of a red onion, cut in half and sliced very thin
chopped cilantro, to taste
Follow instructions on the pizza crust package for the temperature and amount of time to cook the pizza.
Salt chicken breasts on both sides and then place them in a oven proof baking dish. Pour BBQ sauce on top of the chicken, and then flip the chicken over and coat as well. Bake for about 20 minutes or until chicken is done.
Remove from the oven and dice. Set aside. (this picture looks kinda yuck, but it's yum. i promise.)
Rub a little bit of olive oil over the pizza crust. You don't have to do this, but i think it gives the pizza crust a nice taste! Spoon a couple of tablespoons of BBQ sauce over the crust and spread it evenly. Sprinkle the mozzarella cheese on top of the BBQ sauce.
Side note: Ruby puppy loves to lay right in the middle of the kitchen floor as I'm cooking, but how can I be annoyed with a face like that?!

Next, grab your sweet red onion. I think red onions have the prettiest color! Look how lovely that is!

Slice a red onion in half, from root to tip then pull out the center core so you can achieve half moon slices.
These are the Lab safety goggles I wear while i slice onions. Ryan brought them home from work for me and they are my best friend. they keep my eyes from burning! don't hate.
Then place the slices on top of the mozzarella cheese. After this, sprinkle the diced chicken on the pizza and bake. ( i forgot to take a picture with the chicken on top).
After baking, sprinkle the chopped cilantro on top of the pizza. This is the secret weapon and gives it such an unexpected taste! This is seriously one of the best pizzas ever. The sweet red onion, bbq chicken, and cilantro tastes so great together! Mmmmmm... enjoy!
